Creamy Broccoli & Chicken Over Rice

Good Afternoon

Last night I created something for dinner that was super easy and tasted amazing! Very simple recipe to follow, and easy ingredients.  I call it Creamy Broccoli & Chicken Over Rice.


Ingredients:
2 boneless skinless chicken breasts
3 Broccoli stocks
1 can cream of chicken soup
1/2 jar Cheez whiz
2 1/2 cups uncooked rice

Step One: Cut up broccoli into small pieces and bring to boil. Meanwhile, cook chicken breasts in separate skillet. 
Step Two: Drain all water from broccoli, and chop chicken breasts into small pieces. 
Step Three: Add full can of soup & 1/2 jar of Cheez whiz to broccoli pot. You can add more to taste but I found that to be a pretty good balance. 
Step Four: Add chicken to pot and mix. At this point I added a small amount of water to make sauce a bit more liquid-like but the option is yours. 
Step Five: Cook some rice, I use minute rice so I just saved this step to last while I had sauce pot simmering. 

Add sauce mixture to top of rice and enjoy :) 

This will make about 5-6 servings of 1 cup each, ours is already gone. Its so addicting.

  1. LOL...no more buying Sidekicks eh...good job, looks delicious...but you know I love mushrooms so I'd use cream of mushroom soup instead :)

    BTW...if you ever decide to try "real" rice, try whole grain brown rice, it doesn't clump together like white rice does...and it's much healthier.

  2. LOL I also would have used cream of Mushroom soup but only because I detest cream of chicken soup--- my hubby liked it so we had it lots and I grew tired of it.
    And I agree that brown rice is healthier but it is also tastier than white rice... if you have access to a rice steamer it is so easy to cook rice... For Brown Rice, I put in 1 cup of rice, 1-1/4 cups water or chicken broth ( If I am making a chicken dish) and a dash of salt. My rice cooker booklet says to cook for 56 minutes but I found it wasn't cooked so I adjusted it to 70 minutes and it comes out perfect...
    White rice cooked in a rice steamer comes out good as well.. and best part... you don't have to worry it is going to boil over and mess up your stove.
